Keep the revs low, and gradually lower and then turn off the choke when the bike can run fine without it. A blocked pilot jet is typical, but don’t overlook a blockage of the fuel passages or an air leak at the float bol gasket because of a warped float bowl. Some carbs won’t have bolts in the corner and instead have a wire latch over top which can just be forced over. Prior to this the bike would fire straight up with the choke on and after about 15 seconds the choke would be turned off and would idle perfectly. Once you start your bike back up (remember to throw the petcock back into the on position, of course) your carburetor will give your engine a whole cleaner run for its money. :^) I would definitely turn the idle speed screw back out a few turns before starting it, and make sure your kill switch is working.
